Shaved Herbed Squash Salad with Feta, Lemon and Virgin Olive Oil

Ingredients

  • 1 pound (tender-skinned) squash, such as zucchini, yellow or crookneck, ends trimmed
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped shallots
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons sea or kosher salt
  • 1½ teaspoons cracked pepper
  • ¼ cup virgin olive oil
  • ½ cup French feta cheese
  • 2 green onions, finely diced

Instructions

With a mandolin, shave the squash lengthwise approximately 1/16-inch thick (the thinner, the better). Toss squash with mint, dill, shallots, lemon, salt, pepper and olive oil. Top with crumbled feta and green onions. Serve immediately, as the salt and oil will break down the squash.
